One of my little sisters requested a "good" banana bread recipe today & since I typed it up for her... I thought I would share it with everyone. This one is my favorite!! It is a Pampered Chef Original... but I always tweek them to my liking!! Enjoy
Don't let the picture fool you... it isn't hard at all:
Peanutty Chocolate Banana Bread
Ingredients:
2 c. flour
1 c. sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 c. mashed ripe bananas (when the peel start to go black or are all black - it's about 2 med or 3 small) adding more doesn't hurt either!
1/3 c. milk
1/3 c. peanut butter
3 tablespoons vegetable oil
1 egg
1 c. milk chocolate chips
1/3 c. peanuts chopped - (I have left these out a time or two & it is still wonderful!)
- Preheat oven to 350 degrees. Spray bottom of your pan only (that way the bread can climb the sides of the pan) with a spray pam or rub in veggie oil w/ paper towel.
- In a bowl combine flour, sugar, baking powder, & salt. Add bananas, milk, peanut butter, & oil & egg. Stir just until dry ingredients are moistened.
- Stir in 3/4 c. of the chocolate chips. Pour batter into your pan. (Make sure to leave 1-2 inches empty at the top of pan so it can rise.)
- (Chop the nuts) then sprinkle the nuts & remaining Choc. chips over the batter.
- Bake for 60 minutes (insert a toothpick & if comes out clean then ready) if not - put back in & check every 2-3 minutes (but once the top is golden brown - you should be fine.)
- Cool for 10 minutes - loosen sides of loaf from the pan with a knife. Remove loaf by turning upside down & setting on a cooling rack or a clean kitchen towel to cool completely. Slice & enjoy!! (makes 1 loaf)
